What is Maksym?

Maksym (Максым) is one of Kyrgyzstan's most cherished traditional drinks. Made from fermented roasted grain — typically barley or millet — it has a subtly sour, earthy, and refreshing flavor unlike anything else. On a hot summer day in Bishkek, a cold cup of Maksym is the closest thing to a sip of home.

Unlike store-bought versions, homemade Maksym carries the patience and care of whoever made it. Every family has their own subtle twist: a different grain ratio, a longer fermentation, a pinch of dried herbs. This is our family's version — my mom's version.
